Keep It Real
I did it! I made borscht! I had not idea what it was before last week, but with my love of Ukrainian culture it just made sense to try it out. This one is the simplest recipe I saw, and I think I'll try some more meaty ones in the future as well.
🔸2 large beets roasted and chopped finely.
🔸1/2 an onion.
🔸3 cups vegi broth.
🔸large bunch of dill.
🔸red wine vinegar, salt and pepper to taste.
🔸optional extra yoghurt and dill for garnish.
🔸oil for sautéing.
Sauté chopped onion in large skillet or pan until tender. Add pre roasted and chopped beets along with broth. Bring to a boil and then turn to medium low until beets begin to sort of dissolve. Add vinegar, salt and pepper and dill. Top with yoghurt. Enjoy!
